This recipe is one of my personal favourites because it is jam-packed with flavour and will leave you feeling warm, happy and full.

The ingredients for this recipe are quite simple and adaptable, so if you alter this recipe to better suit your flavour palette or the ingredients you already have, I’m sure the end product will still taste delicious.

All that’s needed is

  • coconut oil,
  • a yellow onion,
  • tomatoes or tomato paste,
  • chickpeas,
  • sweet potato,
  • cauliflower or broccoli,
  • оne can of coconut milk,
  • water,
  • red curry paste,
  • curry powder.

The process in which you add the ingredients to the pot is not so particular, starting with the oil and onions and finishing off with the coconut milk, water, and seasonings to taste. Cook until everything is soft and fragrant. Pair with your grain of choice and there you have it. One of the most simple and scrumptious recipes using garbanzo beans you will ever make.

All that’s needed is

  • a can of chickpeas,
  • vegan mayo,
  • capers,
  • green onion,
  • salt,
  • pepper,
  • garlic,
  • two slices of your favourite bread.

There are many ways to make hummus, but I think the best and most authentic way is to use tahini.

All that’s needed is

  • chickpeas,
  • tahini,
  • olive oil,
  • lemon juice,
  • fresh garlic,
  • salt,
  • pepper,
  • cumin.

Adding your ingredients into a high-speed blender or food processor, you will simply blend until smooth, adding small amounts of water to assist in the blending process. Once smooth, add your hummus to a beautiful dish and top with olive oil and a fresh herb of choices such as dill or parsley. into a large bowl. Toss your salad in a fresh lemon juice and olive oil dressing and season well with salt, pepper and garlic powder to taste.
