Motif FoodWorks’ Protein Is Made with High-Precision Technology and Is FDA-Approved

Thanks to a young startup specializing in food technology, plant-based meats can be much tastier. Motif FoodWorks of Boston recently unveiled an innovative additive. It’s a myoglobin-binding hemoglobin protein that imparts flavor and aroma to traditional animal meats. The FDA recently granted this ingredient Generally Recognized As Safe (GRAS) status, and it is now available for widespread use.

Although the substance is found in animal muscle, the company has found a way to process it at the gene level. Motif’s protein has the same characteristics as animal protein and can be used to enhance flavor and aroma in vegan burgers, sausages, and other fake meat products. The primary function of animal myoglobin is flavor, but it also imparts a red hue when exposed to oxygen.

Key Ingredient

Factors such as taste, flavor, and texture are known to keep two-thirds of Americans from introducing plant-based meat alternatives into their diets. This feedback helped Motif determine the importance of meat flavor, umami flavor to consumers, and the gap between plant-based alternatives and animal-based meats.

Plant-based foods have the potential to create a more sustainable future, but it doesn’t matter until people start eating them. The supplement helps create a whole new taste and level of sensation for meat alternatives that will be demanded by a broader group of plant-based and flexible consumers.

Earlier this year, the company took in about $230 million in investments. Now that the product has received FDA approval, the company is starting to scale and commercialize it. Thus began construction of a branch in Northborough, Massachusetts. This facility is planned for 65,000 square feet and is to include a research and development center, as well as pilot plants for fermentation, ingredient, and finished product production. The food technology and finished products created at this facility will be used for consumer testing and sampling, as well as for process validation before being shipped to large-scale manufacturing partners.
