  • 1 large butternut squash
  • 2.5 tablespoons of plant-based butter of your choice (salted works best)
  • 3 tablespoons of olive oil
  • 3.5 cloves of garlic (minced)

  • Finely chopped parsley (for garnish)


  1. Preheat your oven to 215’C
  2. Cut your butternut squash in half (lengthwise)
