These vegan tofu tacos have a secret ingredient that will take your mediocre tofu taco recipe to the next level. The secret ingredient being walnuts! If you are working with a nut allergy these easy tofu tacos taste just as great without the addition of walnuts so don’t give up yet! Ingredients

Vegetarian Taco INGREDIENTS

Vegetarian Taco Fillings

  • Extra Firm Tofu, 1 block
  • Walnuts, 1 cup
  • Meatless Tofu Seasoning
  • Olive Oil, 2 tbsp
  • Liquid Smoke, 1 tbsp

Meatless Tofu Seasoning

  • Chili Powder, 1 tbsp
  • Garlic Powder, 1 tsp
  • Onion Powder, 1 tsp
  • Red Pepper Flakes, ½ tsp
  • Oregano, ½ tsp
  • Smoked Paprika, 1 ½ tsp
  • Cumin, 1 tsp
  • Salt, ½ tsp
  • Pepper, ½ tsp

Creamy Chipotle Sauce

  • Vegan Mayo, ⅓ cup
  • Sriracha, 3 tbsp
  • Garlic Powder, 1 tbsp
  • Lime, ½ juiced

Extras

  • Corn Tortillas
  • Hot Sauce (optional)
  • Cilantro (optional)
  • Lime (optional)

How to Season Tofu for Tacos

The first step to creating the best tofu taco recipe is to season the tofu which is taking place of the ever so common ground meat filling. You are going to start by preparing all of the ingredients for the tofu taco crumbles. As you may know by now, you are going to have to press your tofu before using it in order to expel any of the unnecessary juices. If you have a tofu press, I’m sure you know the drill. If not you can simply press your tofu by using a tea towel. Wrap your tofu in a tea towel and gently press and squeeze the liquid out. It’s okay if the tofu crumbles as we’re going to be crumbling it in this recipe anyways. Once your tofu is pressed, using your hands you will crumble your tofu into a bowl and set it off to the side. Now it is time to grind up your walnuts. Place your walnuts in a blender and blend them until they have broken down into the size of pebbles. We don’t want to grind too much because then they will not add the texture we’re looking for. Once your walnuts are ground, place them in a bowl and set them off to the side as well. In a separate bowl, you will make your Meatless Tofu Seasoning. This step is quite simple, if not the most simple. Add all of the required spices to a bowl and mix them up until they are well incorporated.

Now that you have prepped all of your ingredients, it’s time to get cooking. Heat your olive oil in a large pan. Once the olive oil is heated, add your walnuts into the pan. Cook these on their own for about 1-2 minutes before adding your tofu. Once you add your tofu to the pan, mix the tofu and walnuts together and add your Meatless Tofu Seasoning. Let this mixture cook on medium heat until the excess water from your tofu cooks off, this should take anywhere from 7-10 minutes. Finally, add in your liquid smoke and cook for 1-2 more minutes. I always recommend taste testing as your cooking to add any extra salt or pepper to your liking. And there you have it! Your delicious, and very easy tofu taco crumbles.

Making your Creamy Chipotle Sauce

This creamy chipotle sauce is so easy to make and will be a delicious finishing touch to any of your vegan tacos recipes. To a small bowl, you will add your vegan mayo (any brand will do), sriracha, garlic powder, and lime juice. With a fork or small whisk, you will combine until smooth. Depending on how liquidy you want your sauce to be you can add more lime juice or water if needed. I love to drizzle my sauce over my tacos so I enjoy it to be fairly runny. In the end, it’s your sauce so do what your heart desires. If you are not trying to make your tacos vegan, you can omit the vegan mayo for non-vegan mayo, the recipe will work the same. If you are attempting to make your tofu tacos real simple, you can omit this creamy chipotle sauce altogether. Once again, they are your tacos so you have all of the freedom.

Now that you have created both your tofu filling and your creamy sauce, you’re probably wondering how else you can fill your vegan/vegetarian tofu tacos. I love adding homemade guacamole, some fresh lettuce for an added crunch as well as a corn salsa. You can also sautée some bell peppers along with red onions. If you are not trying to make these tacos 100% vegan, sprinkling a bit of shredded cheese on your tacos is never a bad idea. If you are going the vegan route and also want to add cheese, I recommend the Daiya shredded cheese alternative! The beautiful thing about tacos is that they are totally personal and customizable. However, because the tofu taco filling and creamy chipotle sauce are so rich in flavor, I recommend sticking to light and fresh ingredients so that you don’t overwhelm your tastebuds.

Assembling Your Tacos

Assembling your Tacos

The moment you have been waiting for has finally arrived, it is time to build your beautiful tofu tacos. I will use this time to explain how I assemble my own tacos but feel free to put a personal twist on your own tacos. I start by placing three corn tortillas on a large plate. On each tortilla, I scoop a friendly amount of our vegan tofu taco filling. Following the tofu crumbles, I add a few pieces of fresh romaine and a dollop of my homemade corn salsa. Store-bought corn salsa will do the trick as well. I then drizzle the creamy chipotle sauce over our taco insides. Following this step, I sprinkle some freshly chopped cilantro, a drizzle of fresh, tangy lime juice, and a drop of hot sauce on each taco. Tacos aren’t always pretty, but if you nail the presentation I suggest you take a photo to savor this moment. Side note, if you are making these tacos for your children, invite them onto the assembly line. This will provide them with a sense of pride and joy knowing that they were able to put together their own tacos. Not only will it provide them with a sense of independence, but will also create a beautiful sense of family and community in the kitchen.
