After trial upon trial, I have finally created the perfect marriage of texture and flavour wrapped within a delicious fresh tortilla. I know there are vegetarian burrito recipes all over the internet, but trust me when I say this is the one you must try. Okay, before I start rambling on for too long about my love for my vegetarian burritos recipe, let’s get started.

Burrito Vegetarian Recipe

Ingredients

For the Beans:

  • 1 can black beans
  • ½ red onion
  • 2 cloves garlic minced
  • 1 tsp cayenne (optional)
  • Salt to taste
  • Pepper to taste
  • 2 tbsp olive oil

For the Peppers:

  • 1 red bell pepper
  • 1 yellow bell pepper
  • ¼ red onion
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste

For Guacamole

  • 1 whole large avocado
  • ½ large tomato
  • ¼ red onion
  • Freshly chopped cilantro
  • ½ freshly squeezed lime
  • ½ tbsp garlic powder
  • Salt to taste
  • Pepper to taste

For Fresh Salsa

  • 1 whole large tomato
  • ½ can of corn
  • Freshly chopped cilantro
  • Salt to taste
  • Pepper to taste

For Miscellaneous

  • Finely chopped red cabbage
  • Vegan sour cream (tofutti)
  • Lime wedges
  • Large flour tortillas

Cooking Instructions

Easy Vegan Bean Burrito Recipe

I know that may seem like a lot of ingredients, but a lot of the required ingredients for each step are repetitive, so in actuality, the list of ingredients is quite short and simple. Now that we know everything we need to create these delicious burritos vegetarian style, let’s get into the cooking instructions.

The Beans

Grab a pot and heat your olive oil up. Add in your chopped red onion and minced garlic. Once the garlic is golden and the onion is becoming translucent, it is time to add in your beans. Pour the entirety of your can of black beans into the pot, including the thick black bean liquid. Continue cooking, adding in your salt and pepper to taste. Add in your cayenne if you are wanting to spice up your beans. Allow this to thicken and then cover and let sit on a low heat until you are ready to assemble your burrito.

The Peppers

Grab a pan and heat your olive oil up. Add in your bell peppers and red onion. I enjoy slicing these veggies into long skinny strips but you can do as you please. Allow these to continue cooking on a medium to low heat until they are quite soft and fragrant. Add your salt and pepper to taste. Cover and keep on a low heat until you are ready for the assembly.

The Guacamole

Grab a large bowl or a mortar and pestle. Mashup your avocado until the consistency of your liking. I enjoy leaving some chunks but mash until smooth if you so, please. Add in your diced red onion and tomato and stir until evenly dispersed. Sprinkle in your chopped cilantro, lime juice, salt, pepper and garlic powder. Mix one last time until well combined. Taste test your guac and add anything you feel it may be missing.

The Fresh Salsa

Grab a bowl and add in your diced tomato and corn. Mix these together until well combined. If you feel the ratios are off, feel free to add more or less of either ingredient. Add in your freshly chopped cilantro, salt and pepper to taste.

The Assembly

We could also call this the vegetarian wet burrito recipe as after we assemble and heat these babies up, they are going to be oozing with delicious and fragrant juices. So to assemble these amazing monsters you will need a big workspace. Place your large tortilla down on your surface and begin with your beans. Put as many beans as you would like, covering about ½ of your tortilla. Next, add your nicely sauteed peppers and onions. Following this add a generous dose of guacamole. Sprinkle on your fresh salsa following the guac. If you so please add a few dollops of your vegan sour cream, though be sure to save some for dipping. Finish this off with your finely chopped red cabbage and get folding. Fold your burrito baby up as tight as possible, ensuring the top and bottom are both closed. Next, you have a choice. Either you can place your burrito in the oven if you’re into baked burritos vegetarian style. If you don’t want to bake it, place your burrito into your already dirtied pan that you cooked your peppers in. Allow to brown on both sides with or without the use of oil, the choice is yours.
