Ask someone in England to name a traditional Christmas food, and they would almost certainly say Christmas pudding. Some may even argue that this isn’t a real Christmas dinner if there is no pudding on the table. Of course, some wrong people claim that they don’t enjoy delicious and comfortable admiration, which is very much in vain.

As far as we know, this dessert was first named as a Christmas pudding in the cookbook by Eliza Acton in 1845. Some foods are used here that are not suitable for vegan consumption. So that you can cook exactly the gluten-free vegan Christmas pudding.

And so, let’s start cooking by defining what is vegan Christmas pudding made of:

  • 50 g dried cranberries;
  • 50 g of raisins;
  • 50 g dried apricots;
  • 50 g hazelnuts;
  • 50 g of almonds;
  • 200 g gluten-free flour;
  • 1 apple;
  • Juice and zest of the 1st orange;
  • 3 tablespoon aquafaba (chickpea decoction or decoction from other legumes);
  • 80 ml. coconut oil;
  • 2 tablespoon coconut sugar;
  • some cinnamon to taste;
  • teaspoon baking powder or baking soda;
  • half of the teaspoon nutmeg;
  • half of the teaspoon of ground cloves;
  • ¼ part of ground ginger;

For glaze:

  • 50 g cashews;
  • 50 g fresh dates;
  • 250 ml. filtered water;
  • A pinch of cinnamon;
  • 1 tablespoon chia seeds.

Optionally, you can adjust the proportions for dried fruits based on your preferences, without going beyond the total mass, or replace them with those that you like best.

If you want to make vegetarian Christmas pudding then use butter made from cow’s milk instead of coconut, and use a cane or white sugar instead of coconut. Alternatively, you can make other icings, such as egg whites and sugar, or with chocolate.

Let’s start preparing our easy Christmas pudding for vegans. Cooking pudding for 4 servings would take us about 4-5 hours. Yes, this is a long time, but if you can hold out for this time, the result can please you!

  • Place cashews and dates in a container, top with boiling water, and leave overnight.
  • Stir in the morning using a mixer. After an hour, add the chia seeds and stir again.
  • If your frosting is too runny, add some more chia seeds. If it is too thick, add more water.
  • Soak cranberries and raisins in filtered water (alternatively soak in rum or whiskey) and let sit for 15 minutes.
  • Rub the apple and roughly chop the nuts
  • In a bowl, combine cranberries and raisins, chopped dried apricots, pitted dates, grated apple, and nuts.
  • In another bowl, stir together the flour, baking powder/baking soda, spices, and sugar until smooth.
  • Add melted coconut oil, orange zest and juice, and aquafaba to a bowl of dried fruits and mix thoroughly. After mixing, start adding the flour mixture gradually.
  • Pour the mixture into a heat-resistant glass dish and cover tightly with parchment paper, leaving room for the pudding as it rises.
  • Pour water into a saucepan and place it on the stove. When the water is hot, place a bowl of dough on top so that it doesn’t come into contact with the water inside.
  • Cook for 2 hours at 90 °C.
  • Let the pudding cool, then transfer to a container and refrigerate until serving.
  • Cover the pudding with icing and let it grab a little and take a nice shape, you can leave it in the refrigerator. Our ultimate vegan Christmas pudding is ready!

By the way, if you let the pudding brew for several days before use, its taste would be even richer, and the smell would be stronger (perhaps, from the other end of the house, your family would hear that you have taken it to the table).
