Ingredients

  • 2 tbsp oil of choice (i used olive)
  • 1 can jackfruit
  • 1 onion, sliced thinly
  • 2 tbsp adobo sauce
  • 4 cloves fresh garlic, minced
  • ½ tsp chili powder
  • 1 tsp cumin
  • 1 ½ cup water
  • Salt to taste
  • Black pepper to taste

Directions

To your pan heat up your oil and add in your sliced onions and minced garlic. Cook these until they have browned and are fragrant. Strain your canned jackfruit from its brine and add it to the pan. Add in your Adobo sauce and the remainder of your spices. Allow the spices to simmer for 3 minutes before adding in your water. Once your water is added, allow the mixture to sit until the jackfruit has softened and absorbed the water and flavor. While stirring sporadically, ensure to break up your jackfruit with a fork in a shredding fashion. And that’s all. Serve up in a corn tortilla with the toppings of your choice.

Directions

Making this BBQ pulled jackfruit is extremely easy and not time consuming at all. The first thing you are going to do is throw your jackfruit into a large mixing bowl. Shred it apart with your fingers or a fork. Add in your smoked paprika, chili powder, salt and pepper. Mix until the seasoning is equally distributed throughout your shredded jackfruit. To a pan, add your oil and let it heat up. Add in your jackfruit and let that cook for 2 to 3 minutes. Finally, add in your BBQ sauce of choice and water. Allow this mixture to simmer with a lid on for around 15 minutes. Make sure to stir this mixture sporadically to avoid any sticking or burning to the bottom of the pan. Ingredients

  • 2 tbsp coconut oil
  • 1 can coconut milk
  • 1 cup water
  • 1 can jackfruit
  • 1 whole onion, chopped
  • 4 cloves fresh garlic, minced
  • 1 whole tomato, chopped
  • 1 head broccoli, florets
  • 1 tbsp red thai curry paste
  • 3 tbsp curry powder
  • Salt to taste
  • Pepper to taste

Directions

In a large pot, heat your coconut oil. When warm, add in your onions, garlic and tomatoes. Allow these to cook for about 3 to 5 minutes. When ready, add in your jackfruit, curry paste and seasonings. Following this, add in your coconut milk, water and broccoli florets. Cover your pot and allow this to cook on medium to low heat for around 30 minutes or until everything is soft and ready to eat. While stirring, make sure to shred your jackfruit apart with a fork. This dish, when ready to serve, works perfectly with fresh rice or quinoa.
