Many Asian cuisines, for example, Korean japchae vegan and gluten-free are a traditional dish eaten and enjoyed by many and happen to be easily represented as vegan, and I’m going to be showing you exactly how to make it.

A traditional vegan japchae recipe stir-fried is a savory, salty, slightly sweet, and light dish. It encompasses a variety of vegetables mixed together with stir-fried glass noodles and a delicious sweet sauce. It is a traditional Korean dish that is loved and enjoyed by the locals.

Of course, the main question we are all asking ourselves, is “is it vegan?”, and can we enjoy it? Many Japchae recipes are actually 100 percent vegan and contain no eggs, dairy, or animal products. Instead, they are packed with vegetables and added tofu for protein. So what are japchae noodles made of? Japchae noodles are also called glass noodles due to their see-through appearance. They are made from a combination of sweet potatoes and the scratch from mung been potatoes and are naturally vegan and gluten-free.

If you want to hop on the Korean bandwagon then all you need is a bit of time, the correct ingredients, and patience. This vegan japchae recipe is extremely simple, quick, and easy to follow.

Servings: 4 servings

Ingredients:

  • 1 pack extra firm tofu
  • 1 pack glass noodles
  • 1 small-medium zucchini
  • 1 small carrot
  • 1 medium onion
  • 3 scallions
  • 3 garlic cloves
  • 6 shitake mushrooms
  • Spinach
  • Sesame seeds
  • 5 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon sesame oil

Directions:

  1. Cook the glass noodles over a pot of boiling water. Once cooked, drain, rinse and cover with 1 teaspoon of sesame oil.
  2. In the same pot blanch the spinach until slightly wilted, squeeze out the remaining liquid, chop and set aside.
  3. Slice all the vegetables into match-size pieces and the tofu into rectangular shapes.
  4. Mix together your soy sauce, sugar, and sesame oil in a small bowl and stir until combined, this will form your sauce.
  5. In a large wok, fry the tofu in a little bit of sesame oil and transfer it to another bowl for later use.
  6. In the same wok, fry your onions and garlic for 1 minute. Then add your mushrooms and carrot and fry together for an extra minute. To this add your zucchini and scallions, allow cooking, and then turn down the heat. Lastly, add your glass noodles, spinach tofu, and sauce and toss until all covered evenly.
  7. Top with toasted sesame seeds and enjoy!
